Warm soup on chilly days

Well I am officially 12 weeks along in this pregnancy, and I can honestly say that it is TOTALLY different than any of my other ones. In my previous pregnancies, I would be deathly ill and nauseous, then finally feel some relief as my 12 week mark approached.

This time around, my nausea has just picked up at the 12 week mark and I constantly just feel cold and tired. It’s so strange how our bodies can act so differently each pregnancy. You think that you know what to expect, and life throws you a new curveball!

With the weather hitting freezing here in good ol’ Minnesota, you can only guess that my pregnancy chills are not getting any easier.

So, I decided to make a hearty vegetable and tortellini soup for lunches at work this week. What I absolutely love about soups is that they are easy to make, super filling and tend to be calming on my nauseous tummy.

One thing that is difficult about craving comfort foods, such as soups and stews, is that they tend to be loaded up with heavy cream and butter. I am so happy that this recipe that I am sharing today, is not the case. Its filled with tons of delicious vegetables, cheesy tortellini, and even vegetarian friendly.

 

 

My hope for this pregnancy is to slow my weight gain (avoid DQ blizzards, unlike my previous ones) and make sure to eat a balanced diet. So I am trying to get creative to not only satisfy my health goals, but also satisfy my “comfort food” cravings.

 

 

Slow Cooker Hearty Vegetable & Tortellini Soup

Makes 6 (or so) servings

Ingredients:

  • 1 (9 oz) package cheese tortellini
  • 3 large carrots, peeled & diced
  • 3 large celery stalks, diced
  • 1 medium onion, diced
  • 8 ounces mushroom, sliced
  • 1 handful chopped raw cauliflower (optional- I just like it!)
  • 2 packed cups of baby spinach
  • 1 can white beans (I used great northern beans), drained
  • 1 can fire roasted tomatoes
  • 1 small can tomato paste
  • 3 cups organic chicken broth or vegetable broth
  •  1-2 cups water depending on how “thick” you like your soups
  • 2 Tbs Wildtree organic Garlic Galore Seasoning Blend*
  • 1 Tbs Wildtree organic Absolutely Onion Blend*
  • Parmesan shredded cheese (for topping)

**If you don’t have organic Wildtree seasonings on hand, I suggest trying to sub out with some minced garlic, onion flakes, and Italian seasonings. It won’t be exactly the same, but hopefully close!

 

How to make:

Dump all ingredients, except Parmesan cheese and tortellini noodles, in a large slow cooker. Cover and cook on low for 6 hours. Stir in tortellini noodles and cover for 20 minutes until tender.

(I love my slow cooker because it allows me to prep ingredients and forget, freeing up more time for me to spend with my family. We got to head to our neighbors house for a quick play date and came home to an amazing smelling house!)

 

Serve with a sprinkling of Parmesan cheese and pair with your favorite salad!
